Chère Levana!

I must tell you how much mileage I am getting from your masterpiece, Levana's Table: Kosher Cooking for Everyone. One of my favorite recipes is your couscous almond pudding - délicieux!

I thought you'd like to know that I have made several adaptations to the recipe:

First, because the coconut milk I use comes in a 14-oz. can (and your recipe calls for 10 ounces), I use the entire can and multiply each ingredient by 1.4.

Second, I do not grind the toasted slivered almonds; I leave them whole and enjoy their flavor even more.

Third, because my family found the cardamom a bit too powerful for our Ashkenazic taste buds, I use the following combination instead:

1 teaspoon cardamom
1 heaping teaspoon curry powder
1 heaping teaspoon cinnamon

I close with a question: Where can I get kosher orange flower water?

Gratefully,

Chava Willig Levy

The miso soup is fantastic!!! I make it allll the time, and it tastes better than in the restaurant. I love it and I hsould pass on all the compliments to you that I get from guests.

Hi Levana,
I have to tell you I woke up this morning at 4:30 a.m. already
planning all the things I will cook this week. Your seminar yesterday
was invaluable! Aside from the recipes themselves, you left us all
feeling like regular people like us CAN find time to cook and CAN make
healthy delicious food. I'm so incredibly grateful for your support
and guidance and inspiration!
lots of love,
Leah

Levana,
I am just this side of speechless about yesterday. When I returned home my husband and two friends were there waiting for me. I couldn't stop talking. one friend said she has never seen me this way. They arrived at noon and decided to stay until I came home. I think my demeanor more than suprised both of them.

Now fess up Levanan was this your toast to the NYC marathon. My first fast and rough count is 26 different dishes/items/tastes. But I think I missed a few like the sweet potatoe. Were you shooting for 26 plus items to compete with the 26 miles of Sunday's marathon race? I came home to find black beans soaking from the nite before for a soup I was planning to make- with all the food you sent home with us I feel like the man who brings coals to Newcastle Engl.

Thank you thank you thank you for letting me experience such a unique and encompassing experience. Yesterday was really a reality life show happening.

Watching you cope with your divers multitude of tasks gives me encouragement for mine. thanks.
On the other hand when I told the three of them waiting for me last nite that you were going out to a party after resting for an hour- I had to get down on my hands and knees and scrape them up off the floor - they were flabbergasted at your energy. Me too. as soon as they went home I went to sleep.

Be good, keep up the good work and please do keep me posted as you can.
Karen

Dear Levana,
Just a note of thanks for last night's demo. While everything was delicious, the wild rice with chestnuts and the candied yams were extra-special! Also, since I can't possibly wait for Thanksgiving to roll around, I think I'll be making the pumpkin pecan pie for Shabbos...YUM!!! One question I forgot to ask last night was about the dried chestnuts. You mentioned that you bought them in Chinatown, but are they available in any of the more local stores such as Fairway or Whole Foods? If so, in which section would I find them. Thanks as always...

Love,
Michelle

Dear Levana,
OK, so it's Tuesday morning and I'm still thinking about the amazing turkey dishes from last night's demo! Every single one was so great. Karen and I are having the "doggie-bagged" stir fry and turkey patties with lemon for dinner. Lucky me...two nights in a row! Mazel Tov on the upcoming wedding and hope to see you on December 11th.

Love,
Michelle

You are making me feel even worse... I was mistaken (even though i looked at the class schedule 2 times on the net) thought that classes would be resuming next week...

Have a good Shabbas

In regards to Kosher orange water.. I bought it on 13th avenue in Boro Park

on the same side as Freidmans but accross the st 40th and the 3rd or 4th store. Its a tiny store. I cant remember the name of it.

Hi Levana,

Can't wait to see you on Monday and hear all about the wedding festivities. Also, I've been waiting patiently for months for the chocolate class, and finally it's here! I just wanted to let you know that after the "Talking Turkey - Again" demo, I brought home every single piece (including the bones)of the left over turkey from Thanksgiving. The other night I took some of the cherished turkey out of the freezer and made the Turkey Fried Rice from the demo. It was fantastic! Everyone who missed that demo really missed out!! Thanks again and see you Monday.

Love,
Michelle

Dear Levana,

As you know, a group of friends took Karen to dinner last night at your restaurant. It could not have been more wonderful. Between the five of us, we all got to taste a variety of appetizers, entrees and desserts. Every one of us was thrilled with her choices. Karen's extremely healthy eating habits can present a real challenge to a restaurant, as she typically wants only a small amount of protein and a ton of vegetables. The waitress and chef were both wonderful in accomodating her needs. She had the chicken satay for protein (delicious!) and the chef created a beautiful and diverse vegetable platter for her that she thoroughly appreciated and enjoyed. Everything about the experience was just fabulous! You can bet that we won't be waiting for the next birthday to return! Thanks and see you Monday!

Love,
Michelle
